WHAT I EAT IN A DAY 2/14/25


Obviously, I don't eat the same thing everyday, however, this is a good representation of a typical day for me. I aim for a balanced combination of whole foods...fiber, protein, and healthy fats. 

Breakfast this morning was Greek Yogurt with a mix of blueberries and blackberries, chopped walnuts, pumpkin seeds, chia seeds, and a light drizzle of maple syrup. And of course, coffee...

Lunch was avocado toast...a slice of Dave's sprouted whole grain bread, toasted and topped with mashed avocado and an over-easy fried egg...sauteed spinach...and a sliced organic, cosmic crisp apple...



Tonight's dinner was a healthier twist on traditional spaghetti. The sauce began with chopped onions and crushed garlic, sauteed in olive oil. Then I added 90% lean ground beef, mushrooms, chopped tomatoes, tomato sauce, and herbs, salt and pepper. Just before serving, I threw in a generous handful of baby spinach leaves to wilt into the sauce, and dished it onto a bed of spaghetti squash noodles. Yummy, satisfying, and guilt free!


As you can see, I've had plenty to eat today. Eating healthier is not about depriving ourselves of all the foods we love. My main goals are to cut way down on sugar, processed foods, junk foods, fast food, etc.  But if I want a cookie, I'll eat a cookie. Just not a dozen cookies! 

Healthy eating is a learning process, and eventually becomes a habit. After a while, cooking healthier becomes more enjoyable...a creative outlet. Edible art! 😋
