STUFFED RED PEPPERS
STUFFED RED PEPPERS FOR 2-4
2 Red peppers
8 oz. Lean ground beef
1 cup canned black beans, rinsed and drained
1/2 yellow onion, finely chopped
1/2 tsp. Thyme
1/2 tsp. Oregano
Salt and pepper to taste
1 8oz. Can tomato sauce
1 cup shredded pepper jack cheese (or cheese of choice)
1 Tbl. Olive oil
INSTRUCTIONS
Preheat oven to 400⁰
Cut peppers in half lengthwise, wash, and discard seeds, stems, etc. Dry thoroughly.
Brush pepper halves on both sides with olive oil, and place in a baking dish cut side down.
Bake in oven for 20 minutes.
While peppers are cooking, sauté onions until soft, then add crumbled ground beef. When meat is browned, add beans, thyme, oregano, and salt and pepper.
When peppers are ready, take out of the oven, flip them over, and stuff with the meat/bean mixture.
Pour tomato sauce over and around the peppers.
Sprinkle shredded cheese over the peppers, and sprinkle a little thyme and oregano on top.
Baked in oven for about 15 minutes, then switch to broil for a minute or so.
Serve with brown rice.
