SWEET POTATO & APPLE SOUP
This creamy, healthy sweet potato & apple soup is so satisfying on a chilly Winter evening. A little sweet...a little spicy. Comfort in a bowl.
INGREDIENTS
1 TBLS extra-virgin olive oil
1/4 yellow onion, coarsely chopped
2 small sweet potatoes, peeled and cubed
1 apple (I use organic Gala, cubed, and I don’t bother peeling it)
Vegetable broth (approx. 2 cups) (I use low-sodium)
Salt and pepper to taste
1/2 tsp pumpkin pie spice blend
2 slices of bacon, cooked and chopped (I use uncured, no-sugar/no nitrates or nitrates added)
1/4 cup Greek Yogurt (thinned slightly with milk)
A drizzle of maple syrup (I use sugar-free) (optional)
toasted pumpkin seeds (optional)
METHOD
Heat olive oil in pan, then add the onion, sweet potatoes and apple and saute for about five minutes on medium/high.
Transfer to a saucepan, and add vegetable broth, enough to just cover the vegetables.
Cover and simmer until vegetables are soft. (About 20-25 minutes)
Remove from heat and allow to cool for about 15 minutes.
Pour into a blender and blend until smooth and creamy.
Pour back into saucepan, add pumpkin pie spice blend and salt and pepper to taste. Heat on low for a minute or two.
Pour soup into bowls. Top with a spoonful of yogurt, crumbled bacon, pumpkin seeds, and a drizzle of maple syrup if desired.
